  • 2 eggs
  • 2 c. sugar
  • 2 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • nuts (if desired)
  • 1 tsp. soda
  • 2 tsp. baking powder
  • 1 1/2 c. vegetable oil
  • 2 c. grated carrots
  • 1 c. coconut
  • 1 c. drained pineapple

Directions

    Combine eggs, sugar, flour, cinnamon, salt, baking powder and oil.

    Mix thoroughly.

    Fold in carrots, coconut and pineapple. Pour into greased and floured loaf pan and bake in a 350° oven for 45 minutes.

    Frost cake when cool and refrigerate.
