  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 c. carrots, grated or shredded
  • 1 c. coconut
  • 1 c. chopped nuts

Directions

    Mix first 3 ingredients until smooth.

    Add dry ingredients and mix well.

    Add last 3 ingredients and stir well.

    Bake in 9 x 13-inch pan for 45 minutes at 350°.
