  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. Wesson oil
  • 2 c. sifted flour
  • 3 c. grated carrots
  • 2 tsp. vanilla
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. soda

Directions

    Cream together sugar and eggs.

    Blend in oil.

    Stir together soda, salt, flour, cinnamon and salt.

    Mix and blend.

    Add carrots. Bake in three 8-inch square or three 9-inch round pans at 325° for 35 to 40 minutes.

    Insert toothpick for testing; if comes out clean, cake is done.
