Ingredients

  • 2 c. sifted plain flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 4 eggs
  • 2 1/2 or 3 c. shredded carrots
  • 1/2 c. chopped nuts
  • 1 (15 1/4 oz.) can crushed pineapple, drained and blended in blender
  • 1/2 c. raisins
  • 2 tsp. vanilla

Directions

    Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs; beat at medium speed 1 minute.

    Stir in remaining ingredients.

    Bake in three 9-inch greased and floured pans at 350° for about 40 minutes.

    Yields a 3-layer cake.
