- 1 1/2 c. salad oil
- 4 eggs, beaten one at a time
- 3 c. flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. nutmeg
- 2 tsp. soda
- 3 c. grated carrots
- 1 1/2 to 2 c. chopped pecans
Directions

1Cream sugar and salad oil.

2Add eggs, one at a time.

3Sift dry ingredients together and add to creamed mixture.

4Add carrots and beat one minute.

5Fold in nuts.

6Bake in tube or Bundt pan at 350° for 1 hour.
