- 2 c. sugar
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 3 eggs
- 1 1/2 c. vegetable oil
- 2 c. fine grated carrots
- 1 pkg. vanilla pudding mix
- 1 tsp. vanilla extract
- 1 c. drained, crushed pineapple
- 1 c. shredded coconut
- 1 c. chopped nuts
Directions

1In mixing bowl, combine dry ingredients.

2Add oil, eggs, carrots and vanilla; beat until blended.

3Stir in coconut, 1/2 cup nuts and pineapple.

4Pour into a greased 13 x 9 x 2-inch baking pan.

5Bake at 350° for 1 hour.

6While cake is baking, prepare icing.
