- 1 1/2 c. sugar
- 1 1/3 c. water
- 1 c. raisins
- 1 Tbsp. butter
- 1 tsp. cloves
- 2 large finely grated carrots (they disappear and no one ever knows)
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. chopped nuts
- 2 1/2 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
Directions

1In a medium-size saucepan, put sugar, water, raisins, butter, cloves, carrots, cinnamon and nutmeg.

2Simmer all together for 5 minutes, then cover and rest it for 12 hours.

3This is very important.

4The next day, add nuts, flour, baking powder, baking soda and salt.

5Bake in two oiled loaf pans or one tube pan at 275° for 2 hours.
