  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. oil
  • 2 c. flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 3/4 c. nuts, chopped
  • 3/4 c. coconut
  • 3 c. carrots, grated

Directions

    Cream sugar, oil and eggs together.

    Mix in separate bowl the flour, salt, baking powder and cinnamon.

    Mix dry ingredients into sugar, oil and eggs mix, a small amount at a time until all mixed. Bake 1 hour at 350° in a Bundt pan or flat pan or layer pan.

    Ice with cream cheese frosting.
