Ingredients
- 6 medium firm tomatoes
- 1/2 c. sliced small mushrooms
- 4 Tbsp. oleo or butter
- 1/3 c. sliced green onions
- 1/2 c. cooked peas
- 1 small clove garlic
- 1/2 tsp. basil, crushed
- 1 c. thin, coarsely crumbled, crisp bread
- 2 Tbsp. chopped parsley
Directions

1Cut a thin slice from the top of each tomato and scoop out pulp, leaving 1/2-inch shell.

2Set pulp aside.

3In a saucepan, brown mushrooms in oleo.

4Add onions, peas, garlic, basil and reserved tomato pulp.

5Cook several minutes, stirring occasionally.

6Remove from heat.

7Blend in crisp bread and parsley.

8Spoon into tomato shells.

9Place in shallow buttered dish.

10Bake at 350° for 20 minutes until heated through.

11Serves 6.
