Baked Tomatoes

Ingredients

  • 6 medium firm tomatoes
  • 1/2 c. sliced small mushrooms
  • 4 Tbsp. oleo or butter
  • 1/3 c. sliced green onions
  • 1/2 c. cooked peas
  • 1 small clove garlic
  • 1/2 tsp. basil, crushed
  • 1 c. thin, coarsely crumbled, crisp bread
  • 2 Tbsp. chopped parsley

Directions

    Cut a thin slice from the top of each tomato and scoop out pulp, leaving 1/2-inch shell.

    Set pulp aside.

    In a saucepan, brown mushrooms in oleo.

    Add onions, peas, garlic, basil and reserved tomato pulp.

    Cook several minutes, stirring occasionally.

    Remove from heat.

    Blend in crisp bread and parsley.

    Spoon into tomato shells.

    Place in shallow buttered dish.

    Bake at 350° for 20 minutes until heated through.
