- 3 c. grated carrots
- 2 c. flour
- 1 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 c. sugar
- 1 tsp. cinnamon
- 1 tsp. allspice
- 4 eggs, beaten
- 1 1/4 c. vegetable oil
- 1 tsp. vanilla
Directions

1Combine carrots, flour, baking powder, baking soda, salt, sugar and spices.

2Stir in eggs, oil and vanilla.

3Mix well.

4Pour batter in three greased and floured 9-inch round cake pans.

5Bake in preheated 350° oven for 30 minutes or until a wooden pick comes out clean.

6Cool in pans for 10 minutes.

7Remove from pans and let cool on wire racks.

8Frost layers with Cream Cheese Frosting.
