  • 1 3/4 c. honey plus 1/4 c.
  • 4 eggs
  • 1 1/4 c. vegetable oil
  • 2 c. unbleached white flour
  • 2 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3 c. carrots, finely grated
  • 1 c. black walnuts, finely chopped
  • 1 c. raisins (optional)
  • 1 (8 oz.) pkg. cream cheese
  • 2 1/2 Tbsp. vanilla

Directions

    Mix 1 3/4 cup honey, eggs and vegetable oil; then add flour, cinnamon, salt, baking powder and baking soda.

    Beat well.

    Add carrots, black walnuts and raisins (optional).

    Bake in 3 (9-inch) cake pans or large, long pan at 350° for 50 minutes.
