- 1 3/4 c. honey plus 1/4 c.
- 4 eggs
- 1 1/4 c. vegetable oil
- 2 c. unbleached white flour
- 2 1/2 tsp. cinnamon
- 1 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3 c. carrots, finely grated
- 1 c. black walnuts, finely chopped
- 1 c. raisins (optional)
- 1 (8 oz.) pkg. cream cheese
- 2 1/2 Tbsp. vanilla
Directions

1Mix 1 3/4 cup honey, eggs and vegetable oil; then add flour, cinnamon, salt, baking powder and baking soda.

2Beat well.

3Add carrots, black walnuts and raisins (optional).

4Bake in 3 (9-inch) cake pans or large, long pan at 350° for 50 minutes.
