  • 1 pkg. Pillsbury Plus yellow cake mix
  • 3 eggs
  • 1/3 c. oil
  • 1/2 c. water
  • 1/3 c. brown sugar
  • 2 tsp. cinnamon
  • 2 c. shredded carrots
  • 1/2 c. raisins
  • 1/2 c. chopped nuts

    Heat oven to 350°.

    Grease and flour 12 cup fluted tube pan. In large bowl, blend cake mix, eggs, oil, water, brown sugar and cinnamon until moistened.

    Beat 2 minutes at highest speed.

    Fold in shredded carrots, raisins and nuts.

    Spoon into tube pan.

    Bake for 50 to 60 minutes or until toothpick inserted comes out clean. Cool upright 25 minutes.

    Cool completely before serving.
