- 2 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 c. walnuts, chopped (optional)
- 1 tsp. ground cinnamon
- 3 c. finely shredded carrots (9 carrots)
- 1 c. cooking oil
- 4 eggs
Directions

1Grease and lightly flour 13 x 9 x 2-inch baking pan.

2In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, chopped walnuts and cinnamon.

3Add carrots, oil and eggs.

4Mix well until moistened.

5Beat at medium speed for 2 minutes.

6Pour into prepared pan.

7Bake at 325° for 50 to 60 minutes or until wooden toothpick inserted in center comes out clean.

8Cool thoroughly on wire rack.
