  • 2 1/2 c. plain flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 2 tsp. soda
  • 1 tsp. salt
  • 4 eggs
  • 3 c. grated carrots

Directions

    Mix oil, eggs and sugar.

    Add salt, soda and cinnamon to flour.

    Add to mixture.

    Stir in carrots by hand.

    Add a few nuts if desired.

    Bake at 350°.

    Frost with cream cheese frosting.
