- 2 c. finely shredded carrots
- 2 1/2 c. Softasilk flour
- 3/4 c. salad dressing or mayonnaise
- 1 1/2 c. sugar
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. allspice or ginger
- 3 eggs
- 1 (8 oz.) can crushed pineapple (in juice), undrained
- 3/4 c. chopped pecans
Directions

1Grease and flour two 9 x 1 1/2-inch pans.

2Beat all ingredients (but carrots and pecans) in bowl on low for 30 seconds.

3Beat on medium 3 minutes. Stir in carrots and pecans. Pour in pans. Bake 30 to 35 minutes at 350°.
