  • 2 c. finely shredded carrots
  • 2 1/2 c. Softasilk flour
  • 3/4 c. salad dressing or mayonnaise
  • 1 1/2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. allspice or ginger
  • 3 eggs
  • 1 (8 oz.) can crushed pineapple (in juice), undrained
  • 3/4 c. chopped pecans

Directions

    Grease and flour two 9 x 1 1/2-inch pans.

    Beat all ingredients (but carrots and pecans) in bowl on low for 30 seconds.

    Beat on medium 3 minutes. Stir in carrots and pecans. Pour in pans. Bake 30 to 35 minutes at 350°.
