- 1 1/2 c. Wesson oil
- 2 c. sugar
- 4 Tbsp. warm water
- 4 egg yolks
- 2 c. grated carrots
- 2 1/2 c. self-rising flour
- 2 1/2 tsp. cinnamon
- 4 stiffly beaten egg whites
Directions

1Cream oil, sugar and add egg yolks beaten with water.

2Add grated carrots.

3Sift dry ingredients together and add to Wesson oil mixture.

4Fold in stiffly beaten egg whites.

5Bake in three layer pans at 350° for 30 minutes.
