  • 2 1/2 c. cooked mashed carrots
  • 1 stick butter
  • 1 c. sugar
  • 1/4 tsp. cinnamon
  • 3 Tbsp. flour
  • 1 tsp. baking powder
  • 3 eggs
  • 1 tsp. vanilla

Directions

    Mix flour and cinnamon.

    Mix carrots and butter.

    Add flour mixture with baking powder.

    Beat eggs separately and add to carrot mixture.

    Then add vanilla.

    Bake in 2-quart casserole at 350° for 15 minutes.
