- 2 1/2 c. cooked mashed carrots
- 1 stick butter
- 1 c. sugar
- 1/4 tsp. cinnamon
- 3 Tbsp. flour
- 1 tsp. baking powder
- 3 eggs
- 1 tsp. vanilla
Directions

1Mix flour and cinnamon.

2Mix carrots and butter.

3Add flour mixture with baking powder.

4Beat eggs separately and add to carrot mixture.

5Then add vanilla.

6Bake in 2-quart casserole at 350° for 15 minutes.

7Then bake at 325° for 45 minutes.
