Carrot Casserole

  • 5 1/2 peeled scraped carrots
  • 1 1/2 c. water
  • 1 chicken bouillon cube
  • 1 bunch green onions, chopped
  • 2 Tbsp. butter
  • 8 oz. American cheese spread, cubed
  • 8 oz. sour cream
  • 1/4 c. milk
  • 1 Tbsp. Italian seasoned bread crumbs
  • 1 Tbsp. chopped parsley

Directions

    Combine first 3 ingredients in saucepan and bring to a boil. Simmer 15 to 20 minutes until crisp-tender.

    Drain.

    Saute onions in butter in skillet and add cheese spread, sour cream and milk. Blend well.

    Stir in carrots and spoon into a greased casserole. Sprinkle with crumbs and parsley.

    Bake at 350° for 20 minutes until hot.
