  • 1 13/16 cups carrots
  • 1 cup sugar
  • 2 eggs
  • 7 3/8 tablespoons vegetable oil
  • 5 3/8 tablespoons milk
  • 2 3/8 cups flour
  • 2 teaspoons baking powder
  • 7 1/4 tablespoons ground almonds
  • salt

Directions

    Preheat the oven to 170C.

    Sift the flour with the baking powder and a pinch of salt.

    Grate the carrots and let them drain.

    Beat the eggs with the sugar until foamy.

    Add the carrots, oil, milk, and flour by using the folding technique.

    Fill the cupcake liners with the batter. (It is also possible to use a loaf pan.)

    Bake for approximately 30 minutes, until lightly golden.

    Once cooled, sprinkle with powdered sugar.
