  • 34 cup shortening
  • 34 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 cup carrot, cooked and mashed
  • 2 cups flour
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 2 cups powdered sugar
  • 2 tablespoons butter
  • rind of one orange
  • juice of one orange

    Cream shortening and sugar until fluffly.

    Add egg, vanilla and lemon extracts and combine.

    Add carrots and mix.

    Combine flour, baking powder and salt.

    Mix into carrot mixture.

    Drop by spoonfuls on baking sheet.

    Flatten.

    Bake at 375 for 10-12 minutes.

    Combine powdered sugar, butter and orange rind.
