- 34 cup shortening
- 34 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1 cup carrot, cooked and mashed
- 2 cups flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 2 cups powdered sugar
- 2 tablespoons butter
- rind of one orange
- juice of one orange
Directions

1Cream shortening and sugar until fluffly.

2Add egg, vanilla and lemon extracts and combine.

3Add carrots and mix.

4Combine flour, baking powder and salt.

5Mix into carrot mixture.

6Drop by spoonfuls on baking sheet.

7Flatten.

8Bake at 375 for 10-12 minutes.

9Frosting:.

10Combine powdered sugar, butter and orange rind.

11Add orange juice til spreading consistency.

12Spread on cooled but still warm cookies.
