  • 3 c. all-purpose flour
  • 1 1/3 c. Domino granulated sugar
  • 1 tsp. baking sugar
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 2 eggs, beaten
  • 3/4 c. oil
  • 1 1/2 tsp. vanilla extract
  • 1 (8 oz.) can unsweetened crushed pineapple (undrained)
  • 2 c. diced bananas (about 2 large)
  • 1 1/2 c. grated carrots
  • 1 c. chopped pecans or walnuts, toasted

Directions

    Combine first 5 ingredients, stirring well. Combine eggs, oil, vanilla and pineapple. Add to dry ingredients, stirring until well blended. Add bananas, carrots and pecans, stirring just until blended. Pour into a greased and floured 10-inch Bundt pan. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 20 minutes. Remove from pan and let cool completely on a wire rack.
