- 1 1/2 c. grated carrots
- 3 1/2 c. sugar
- 1/2 c. sweetened condensed milk
- 1/2 c. water
- 1/2 Tbsp. lemon flavoring
Directions

1Cook the carrots, sugar, condensed milk and water to the soft-ball stage.

2Remove the pan from the heat; add the lemon flavoring and cool to room temperature.

3Beat until the mixture is creamy.

4Pour the fudge into a shallow pan.

5Pat it down to 1-inch depth and let it cool.

6When it is firm, cut into squares.
