Ingredients
- 1-1/3 cup shortbread cookie crumbs
- 1/4 cup butter, melted
- 2 cups shredded carrots
- 3 pkg. light
- regular cream cheese, at room temperature
- 1/3 cup granulated sugar
- 1/3 cup maple syrup
- 3 eggs
Directions

1Crust: Combine ingredients; mix well.

2Press into 9-inch springform pan.

3Bake in preheated 350F oven for 10 minutes.

4Filling: Simmer shredded carrots in water to cover for 5 minutes.

5Drain and remove excess liquid.

6In food processor combine carrots, cream cheese, sugar and maple syrup;process until completely smooth and evenly colored.

7Add eggs, one at a time, and mix until just blended.

8Pour into crumb crust and bake at 300F for 45 minutes or until center is almost set.

9Cool to room temperature.

10Refrigerate 3 hours or overnight.
