- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. shredded carrots
- 1 large egg, beaten
- 1/2 c. milk
- 1/4 c. vegetable oil
- 1/2 c. sugar
- 1/2 c. raisins
Directions

1Preheat oven to 425°.

2Grease 12 muffin pan cups.

3In large bowl, combine flour, baking soda, salt and cinnamon.

4In medium bow, whisk carrots, egg, milk, oil, sugar and raisins.

5Stir into dry ingredients until combined.

6Spoon into prepared muffin pans. Bake for 20 minutes.

7Unmold and cool on wire rack.

8Makes 1 dozen.
