- 2 c. sugar
- 4 eggs
- 1 c. margarine
- 3 c. flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 c. shredded carrots
- 1 c. chopped walnuts
Directions

1Beat together the sugar, eggs and margarine.

2Add the dry ingredients and mix well.

3Stir in the carrots and walnuts.

4Pour equal amounts into two (2) no-stick loaf pans.

5Bake at 350° for 1 hour.

6Let cool.

7Remove from pan.

8Slice and serve.
