- 1 c. oil
- 2 c. sugar
- 3 eggs, beaten
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 2 tsp. vanilla
- 2 c. grated carrots
- 1 c. chopped pecans
- 1 c. crushed pineapple, drained
Directions

1Combine oil and sugar, mixing well.

2Add eggs.

3Sift dry ingredients together and add, mixing well.

4Add remaining ingredients and pour into 2 greased and floured loaf pans.

5Bake at 350° for 1 hour.

6I use four 7 x 3 1/2-inch pans and bake 40 to 45 minutes, or until a toothpick comes out clean.
