  • 1 cup cooking oil
  • 2 cups sugar
  • 3 eggs
  • 1 cup crushed pineapple
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped nuts
  • 2 cups shredded carrots

Directions

    Cream together oil, sugar and eggs. Add crushed pineapple. Mix together flour, cinnamon, baking soda and salt. Add to pineapple mixture. Next add shredded carrots and nuts. Bake in 2 large or 4 small loaf pans in 325° oven for about 50 minutes.
