- 2 1/4 c. sifted flour
- 1 1/2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3/4 tsp. salt
- 1 c. vegetable oil
- 3 eggs
- 1 1/2 c. shredded carrots
- 3/4 c. crushed pineapple
- 1 1/2 tsp. vanilla
Directions

1Sift together dry ingredients.

2Add vegetable oil and mix thoroughly.

3Add eggs and mix.

4Add vanilla and mix.

5Blend in shredded carrots and crushed pineapple.

6Pour into three greased and floured cake pans.

8Can line pans with wax paper.) Bake at 350° for 35 to 40 minutes or until cake tests done.
