- 1 lb. carrots, peeled and cut into 1-inch pieces
- 1/2 c. butter or margarine
- 3 eggs
- 3/4 c. sugar
- 3 Tbsp. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. real vanilla
Directions

1Grease an 8-inch square baking dish.

2Steam or boil carrots until tender (about 20 minutes).

3Place margarine, eggs, sugar, flour, baking powder and vanilla in blender.

4Add carrots a little at a time and puree the mixture.

5Pour into greased baking dish. Bake at 350° for 45 minutes.

6Let stand for 5 minutes before serving.
