- 2 eggs
- 1/4 c. sugar
- 1/4 c. firmly packed light brown sugar
- 1/4 c. liquid Butter Buds
- 1 1/4 c. all-purpose flour
- 1/4 c. rolled oats
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1 c. shredded carrots
- 1/4 c. raisins
Directions

1Preheat oven to 350°.

2In large bowl, beat eggs with electric mixer until very light and frothy, about 2 minutes.

3Add sugars and continue beating, about 3 minutes.

4Blend in Butter Buds.

5In separate bowl, combine flour, oats, baking powder, salt and cinnamon.

6Add gradually to egg mixture.

7Stir in carrots and raisins.

8Spray a 9 x 5-inch loaf pan with Pam.

9Bake 45 to 50 minutes or until toothpick inserted in center comes out clean.
