- 1 lb. carrots
- 1 fresh lemon
- 1 c. sugar (more or less)
Directions

1Grind carrots in vegetable chopper as fine as possible.

2Grind up lemon in fine pieces (including some rind).

3Add to ground carrots.

4Add 3/4 to 1 cup sugar.

5Refrigerate for about 1 hour. Serves 10 to 12.

6Also can be added to lemon jello (lots of Vitamins A and C).
