Carrot Rice Loaf

- 2 cups water
- 1 cup uncooked brown rice
- 1/2 cup chopped onion
- 2 cups finely grated carrots
- 1/4 cup peanut butter
- 3 slices whole wheat bread, crumbled
- 2 cups milk
- salt and pepper to taste
Directions

1Bring water to boil in a medium pot; add rice. Reduce temperature to a simmer, and cook for 25 to 30 minutes or until done.

2Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

3In a medium size mixing bowl, combine onions, carrot, cooked rice, peanut butter, bread, milk, salt and pepper. Place mixture in the prepared loaf pan.

4Bake for 45 minutes.
