Carrot Ring

Ingredients

  • 2 lb. carrots, diced
  • 1/4 c. Triple Sec or less according to taste
  • 8 Tbsp. butter, melted or less as desired
  • 1 tsp. basil
  • freshly ground pepper

Directions

    Cook carrots in water until tender. Drain and mash. Add Triple Sec, melted butter, basil and pepper. Place in buttered ring mold. Refrigerate until ready to bake.

    Cook at 375° for 20 minutes. When done fill center with cooked green peas, lima beans or other green vegetable.

    Unmold.

    Serves 6 to 8.
