- 1 lb. carrots, skinned and grated or shredded to make 3 c.
- 1/2 c. mayonnaise
- 1 Tbsp. lemon juice
- 1/3 c. coconut flakes
- 1/3 c. currants or raisins (optional)
- 1 tsp. sugar or more to taste
- 1/2 tsp. cinnamon
Directions

1In a bowl, combine carrots, mayonnaise, lemon juice, coconut, currants (if using) and sugar.

2Add cinnamon and toss with fork. Refrigerate a few hours; toss and serve.
