Ingredients

  • 1 lb. carrots, skinned and grated or shredded to make 3 c.
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/3 c. coconut flakes
  • 1/3 c. currants or raisins (optional)
  • 1 tsp. sugar or more to taste
  • 1/2 tsp. cinnamon

Directions

    In a bowl, combine carrots, mayonnaise, lemon juice, coconut, currants (if using) and sugar.

    Add cinnamon and toss with fork. Refrigerate a few hours; toss and serve.
