- 3 Tbsp. butter
- 1 lb. carrots, peeled and diced
- 1 small onion, chopped
- 1 medium potato, peeled and diced
- 3 c. beef broth
- 1/2 tsp. salt
- dash of pepper
- 1 Tbsp. chopped parsley
- 1 tsp. marjoram
Directions

1Cook first 4 ingredients over medium heat for 15 minutes. Add beef broth; cook 15 minutes more.

2Add salt, pepper, parsley and marjoram.

3Put in blender and puree.

4Serve.
