- 2 tablespoons butter
- 2 medium onions, chopped
- 2 lbs carrots
- 2 -3 cups vegetable stock
- 8 ounces plain yogurt
- 1 cup milk
- salt and pepper
Directions

1Peel carrots and cut into 1/4 inch thick slices.

2In a saucepan, melt butter.

3Add onions and saute for 3 minutes.

4Add carrots and 2 cups stock.

5Bring to boil, reduce to simmer, and cook 20 minutes.

6Puree soup in food processor, adding yogurt and milk.

7Return to pan and add stock or yogurt to adjust consistency.

8Add salt and pepper to taste.

9Serve hot or cold.
