- 3 eggs
- 1 1/2 c. sugar
- 3/4 c. vegetable oil
- 2 3/4 c. flour
- 1 3/4 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 tsp. cinnamon
- 1 1/2 c. finely shredded carrots
Directions

1Grease a 9 x 5 x 3-inch loaf pan.

2Beat eggs, sugar and oil in large mixing bowl.

3Sift flour, baking powder, baking soda, salt and cinnamon and add to egg mixture.

4Stir in carrots.

5Bake at 325° for 1 hour and 20 minutes or until center springs back.

6Cool 10 minutes in pan.

7Remove and cool completely.

8Sprinkle with powdered sugar or a cream cheese frosting.
