- 10 to 12 large carrots, cut into large chunks
- 2 medium potatoes, peeled and cubed
- 3 yams, peeled and cubed
- 1 medium onion, diced
- 10 large prunes, pitted and cut in half
- 1 clove garlic, crushed
- 1/2 c. brown sugar
- 1 tsp. salt
- 1 tsp. cinnamon
- 2 c. orange juice
Directions

1Place all ingredients into large saucepan.

2Bring to a boil, then reduce heat.

3Simmer over low heat for 1 hour, stirring occasionally.

4If mixture starts to become dry, add 1/2 cup of water at a time.

5Cook until carrots are very soft but not mushy.
