Ingredients
- 1 1/2 c. sifted flour
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- 1 c. sugar
- 3/4 c. cooking oil
- 2 eggs
- 1 1/2 c. shredded, pared carrots
- 1/2 c. chopped walnuts
Directions

1Sift together flour, baking soda, cinnamon, nutmeg and salt; set aside.

2Combine sugar, oil and eggs in mixing bowl.

3Beat with mixer at medium speed 2 minutes.

4Add dry ingredients, stirring just until moistened.

5Stir in carrots and walnuts.

6Pour into greased 9 x 5 x 3-inch loaf pan.

7Bake in 350° oven for 1 hour, or until wooden pick inserted in center comes out clean.

8Cool in pan on rack 10 minutes.

9Remove from pan; cool on rack.

10Makes 1 loaf.
