Ingredients

  • 1 1/2 c. sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1 c. sugar
  • 3/4 c. cooking oil
  • 2 eggs
  • 1 1/2 c. shredded, pared carrots
  • 1/2 c. chopped walnuts

Directions

    Sift together flour, baking soda, cinnamon, nutmeg and salt; set aside.

    Combine sugar, oil and eggs in mixing bowl.

    Beat with mixer at medium speed 2 minutes.

    Add dry ingredients, stirring just until moistened.

    Stir in carrots and walnuts.

    Pour into greased 9 x 5 x 3-inch loaf pan.

    Bake in 350° oven for 1 hour, or until wooden pick inserted in center comes out clean.

    Cool in pan on rack 10 minutes.

    Remove from pan; cool on rack.
