  • 5 Tbsp. margarine
  • 1/3 c. onion, chopped
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1 Tbsp. parsley flakes
  • 1/8 tsp. pepper
  • 1 1/2 c. milk
  • 1/2 c. cornflake crumbs
  • 1 c. American cheese, shredded
  • 4 c. carrots, sliced (about 1 1/2 lb.), cooked and drained

    Melt 2 tablespoons margarine in small saucepan.

    Remove from heat.

    Add cornflake crumbs.

    Mix well.

    Set aside.

    Melt remaining margarine in large saucepan over low heat.

    Add onion and cook only until tender.

    Stir in flour, salt and pepper. Remove from heat and add milk, gradually stirring until smooth. Return to medium heat and cook until bubbly and thickened, stirring constantly.
