  • 1 lb. thinly sliced carrots
  • 1/4 c. raisins
  • 1/4 c. margarine or butter
  • 3 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/4 tsp. ground ginger

Directions

    Cook carrots, covered in 1/2 inch of boiling water 8 minutes. Drain.

    Place carrots in 1-quart baking dish.

    Stir in raisins, butter, honey, lemon juice and ginger.

    Bake, uncovered, in preheated oven at 375° for 35 minutes.
