Carrots In Cognac

  • 2 cups Slivered Carrots
  • 1 teaspoon Sugar
  • 1/3 cups Cognac
  • 1 cup Butter

    I normally use more carrots and adjust this accordingly. But it is a great side dish, and no worries-the alcohol cooks off and leaves a yummy, tasty veggie that your kiddos will eat!

    Sliver the carrots (not insanely thin, but a little more than just cut in half). Place in a baking dish.

    Sprinkle the sugar over the carrots. You can use either white or brown depending on the sweetness of the flavor you are looking for. If I am cooking for kids, I normally use brown.

    Cube up the butter and dot over the top of the carrots.

    Pour cognac over whole thing.

    Bake at 350 degrees for about 1/2 hour or until the carrots are tender.
