- 20 large carrots, scrubbed and cut into 3 to 4 pieces
- 1 tsp. sugar
- 1 1/2 pt. heavy cream
- 1 1/2 c. grated Parmesan cheese
- 1 large onion, grated
- salt and pepper
- about 20 pecan halves
Directions

1Boil carrots in salted water, to which sugar has been added, until tender.

2Drain and put through a food mill or grate in a fairly fine grater.

3Stir in cream cheese and grated onion and season to taste.

4Pour into large greased casserole.

5Arrange pecan halves on top.

6Bake at 350° for 45 minutes to 1 hour.
