Mexican Cornbread Casserole

- 2 lb. hamburger
- 1 green pepper
- 1 big onion
- 2 large cans chili
- 3 c. rice (Minute rice is better)
- cornbread mix (Jiffy), follow directions on bag or box
Directions

1Brown hamburger with onions and peppers; then drain.

2Then add chili; cook rice as directed.

3Add rice to hamburger mixture; then mix cornbread or corn muffin mix.

4Place hamburger mixture in bottom of long or round casserole pan.

5Put cornbread mixture on top and spread over top of meat.

6Bake at 350° for 1 hour or until brown.
