- 2 tablespoons peanut oil
- 2 lbs shrimp, peeled and deveined
- 1/4 cup sliced green onion
- 1/4 cup diced sweet red pepper
- 1 cup fresh peas
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 cup soy sauce
- 4 teaspoons cornstarch
- 3/4 cup cashews
Directions

1Heat oil in lg skillet; add shrimp, green onions, and red pepper.

2Saute for 3 minutes.

3Add peas, broth, salt and ginger.

4Cover, bring to a boil, reduce heat and simmer for 5 minutes.

5Mix soy sauce and cornstarch; Stir in to shrimp and cook and stir for 1 minute.

6Stir in the cashews.
