Catfish Gumbo

Ingredients

  • 1 lb. skinned catfish
  • 1/2 c. chopped celery
  • 1/2 c. green pepper
  • 1/2 c. onion
  • 1 clove garlic
  • 1/4 c. oil
  • 2 beef bouillon cubes
  • 2 c. boiling water
  • 16 oz. can tomatoes
  • 1 can condensed tomato soup
  • 1 (10 oz.) pkg. frozen okra, sliced
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 1 bay leaf
  • dash of Tabasco

Directions

    Cut fish in cubes.

    Cook celery, pepper, onion and garlic in fat until tender.

    Add fish cubes and cook 10 minutes.

    Dissolve beef cubes in hot water.

    Add bouillon, tomatoes, tomato soup, okra and seasoning.

    Simmer for 30 minutes or until fish flakes. Serve over rice.
