- 1 lb. skinned catfish
- 1/2 c. chopped celery
- 1/2 c. green pepper
- 1/2 c. onion
- 1 clove garlic
- 1/4 c. oil
- 2 beef bouillon cubes
- 2 c. boiling water
- 16 oz. can tomatoes
- 1 can condensed tomato soup
- 1 (10 oz.) pkg. frozen okra, sliced
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 1 bay leaf
- dash of Tabasco
Directions

1Cut fish in cubes.

2Cook celery, pepper, onion and garlic in fat until tender.

3Add fish cubes and cook 10 minutes.

4Dissolve beef cubes in hot water.

5Add bouillon, tomatoes, tomato soup, okra and seasoning.

6Simmer for 30 minutes or until fish flakes. Serve over rice.
