- 2 lb. catfish, cut into 1 1/2 to 2-inch pieces
- 3 medium Irish potatoes
- 1 large onion
- 3 strips bacon, cut in halves
- about 4 c. water
- salt and pepper to taste
- hot sauce to taste
Directions

1Fry bacon in heavy pot; add onion and cook until tender.

2Pour in water, seasonings and fish.

3Bring to boil for a few minutes, then turn heat down and simmer for 45 minutes to 1 hour.
