- 4 catfish fillets (about 2 pounds), rinsed and patted dry
- 1/4 cup peanut oil or vegetable oil
- 1 cup panko bread crumbs
- 2 tablespoons cornmeal
- 4 teaspoons Cheater Basic Dry Rub (page 45)
Directions

1HEAT the oven to 450F.

2Lightly coat a large rimmed baking sheet with nonstick cooking spray.

3CUT the fillets into quarters lengthwise.

4Cut each of the four strips in half, making 8 fingers per fillet.

5PLACE the catfish fingers and the oil in a large bowl and toss to coat evenly.

6PLACE the panko, cornmeal, and dry rub in a shallow bowl and blend well.

7Roll each catfish finger in the breading and place it on the baking sheet.

8BAKE for 10 to 15 minutes, until the fish is crispy outside and tender inside.

9The thicker pieces will need a minute or two longer to cook.

10If a finger seems tough when pierced with the tip of a knife, cook it a little longer.
