- 1 head Cauliflower (Fairly Small), Cut Into Large Chunks
- 1 Tablespoon Butter
- 2 Tablespoons Grated Parmesan Cheese
- 1 clove Garlic, Peeled
- 1/2 cups Heavy Cream Or Half-and-Half
- Salt And Pepper
Directions

1Add the cauliflower pieces with a sprinkle of salt to a pot with enough water to cover the cauliflower by half.

2Cover the pot, and cook on medium to medium high (water heavily simmering) for 15-20 minutes until the cauliflower is very soft.

3When the cauliflower is cooked, add it with the other ingredients to a blender or food processor, reserving the cooking water.

4Blend the sauce for 1-2 minutes until very smooth.

5Add cooking water as needed to achieve a sauce consistency.

6Taste, and add salt and pepper to taste.

7Store in the fridge for a few days, or serve immediately with hot cooked pasta.

8Garnish with fresh herbs or extra Parmesan if desired.
