- 6 spring onions
- 2 garlic cloves
- 800 g cauliflower, cooked
- 500 g yoghurt
- 1 teaspoon mustard
- 175 g cheddar cheese
- 2 eggs
- salt
- pepper
Directions

1Place a large, non-stick frying pan over a high heat.

2Add the spring onions, garlic, and cauliflower, and 100ml/3 1/2fl oz of water to the pan and cook for 5-7 minutes, until the water has been absorbed.

3Mix well, then transfer to a shallow, ovenproof dish.

4Preheat the oven to 220C/Gas 7.

5Put all the topping ingredients in a bowl, season well and mix together.

6Pour over the cauliflower mixture, then place in the oven and bake for 15-20 minutes, or until lightly golden and bubbling.

7Remove and allow to stand for 5 minutes before serving.
