  • 6 spring onions
  • 2 garlic cloves
  • 800 g cauliflower, cooked
  • 500 g yoghurt
  • 1 teaspoon mustard
  • 175 g cheddar cheese
  • 2 eggs
  • salt
  • pepper

Directions

    Place a large, non-stick frying pan over a high heat.

    Add the spring onions, garlic, and cauliflower, and 100ml/3 1/2fl oz of water to the pan and cook for 5-7 minutes, until the water has been absorbed.

    Mix well, then transfer to a shallow, ovenproof dish.

    Preheat the oven to 220C/Gas 7.

    Put all the topping ingredients in a bowl, season well and mix together.

    Pour over the cauliflower mixture, then place in the oven and bake for 15-20 minutes, or until lightly golden and bubbling.

    Remove and allow to stand for 5 minutes before serving.
